Arugula & Lemon Pizza Pizza

Do you remember those Little Caesar’s commercials and the caveman would always say, Pizza Pizza; well they have ruined my ability to say pizza one time. “Ma, what are we having for dinner?” My reply, “PIZZA, PIZZA” in my best caveman voice. My children are not amused by it anymore, but it still makes me giggle.

Today, my taste buds are craving arugula. That bitter green that reaches it’s highest potential when lemon is dressed with it, at least to me. There’s just something about arugula and lemon; I can’t put my finger on it, but the only word that comes to mind is DE-LISH-CIOUS! Then you go and add homemade sauce, fresh mozzarella, grape tomatoes, cracked pepper and dash of salt; am I in heaven? I still see the piles on clothes I have to wash so clearly I am not, but I do believe this pizza is definitely a piece of heaven on earth. At least to me anyway. 🙂

I gave measurements for the ingredients in this recipe, but you be the Chef! Add more of something, add less, just have fun with it. Shouting from the rooftop; THERE ARE NO RULES! WOOOHOOOO!!!!


Arugula & Lemon Pizza


  • 1 Prepared Pizza Crust (See my Easy Peezy Pizza Dough Recipe)

  • 1 TBS Olive Oil

  • 1 Cup Grape Tomatoes, sliced in half

  • 2 Cups Mozzarella, shredded

  • Salt & Cracked Pepper

  • 1 TBS of Lemon infused Olive Oil or fresh lemon


  • Brush the crust with the Olive Oil.

  • Sprinkle HALF the cheese on the crust.

  • Add the tomatoes. (Optional: sprinkle the tomatoes with a little salt)

  • Add the other half of the cheese.

  • Bake at 450 until brown and beautiful.

  • Remove from oven, add the arugula, and season with salt and pepper.

  • Drizzle the lemon oil or squeeze fresh lemon juice over it.

  • EAT!
