Shirred Eggs

So you want a “real” breakfast but don’t have the time to make anything elaborate?

Solution:   Shirred Eggs.  It’s just a fancy way of saying, a baked egg.

This is my go-to breakfast when I grow tired of running out the door with just a piece of dry toast and a banana. It’s easy to make and you never grow tired of it because you can make it a thousand different ways. Seriously, I never make it the same way twice. I prepare them before I jump in the shower and by the time I get out, WALLA, breakfast is ready! I’m pretty nice and cook a few of these in case anyone wants one. I don’t usually get an actual thank you from anyone but rather a dirty dish in the sink which signifies to me it was good. That’s thanks enough. 🙂

I usually use pre-chopped ingredients that I have in the refrigerator or I chop them up the night before to make my morning prep painless. Because we eat pizza A LOT, we usually have a ton of chopped ingredients to choose from on any given day. Today I used bacon, tomatoes, spinach, and of course eggs.

Don’t like your eggs runny? Just bake them longer. Like your eggs runny? Cook them for a shorter amount of time. You choose the ingredients, you choose the cook time. It’s a win win either way.

Shirred Eggs

Prep Time: 5 minutes

Cook Time: 20 minutes

Serving Size: 1

Ingredients


  • Non-stick spray or butter to spread

  • 2 Eggs

  • 1 TBS, Bacon, diced

  • 1 TBS, Spinach, thin strips

  • 1 TBS, Tomatoes, small dice

  • Salt & Pepper to taste

Instructions


  • Preheat oven to 350.

  • Using a ceramic oven-safe dish, spray the bottom of the dish with non-stick spray or rub with a thin layer of butter.

  • Crack your eggs into the dish and add all the ingredients on top.

  • Season with salt & pepper and then place in the oven.

  • Cook until desired doneness, between 10-20mins.

Notes

When I am making more than one I usually set them on a baking sheet before placing in the oven for easy removal. Just add a couple minutes to your cooking time.
